Rosemary Mushroom Chicken and Garlic Roasted Green Beans

It’s time for a new recipe! I hope that you’ll all agree with me that my recipes tend to be quick, easy, healthy, and dirty as few dishes as possible.

Don’t get me wrong, I enjoy cooking, just not as much as I enjoy other things, such as time with my family, reading, taking walks, playing with Goose (one of my beautiful granddaughters. You’ll meet her on here soon!) and last but certainly not least, actually getting to enjoy the foods I cook!

Almost all of my recipes can be adapted to your particular taste with very little effort. I certainly hope you’ll enjoy this one!


Chicken and Mushrooms

4 boneless skinless chicken breasts

4 Tbsp olive oil, divided

1 (8 oz) pkg mushrooms (I buy them pre-sliced to save time)

2 Tbsp apple cider vinegar

1/4 cup chicken broth

1 tsp dried rosemary

salt and pepper to taste


  1. Heat 2 Tbsp oil in large non stick pan over medium high heat
  2. Season chicken with salt and pepper to your liking
  3. Cook chicken 6 minutes per side, remembering to season opposite side once flipped. Remove from pan and keep warm.IMG_0770
  4. Heat additional 2 Tbsp oil and add mushrooms. Salt and pepper to taste.
  5. Cook 10-12 minutes until mushrooms are browned.IMG_0774
  6. Add rosemary, vinegar and broth. Simmer on low heat 7 minutes until liquid is slightly thickened. (you can reheat chicken at this point by adding it back to the pan for the last 2-3 min)IMG_0775



Green Beans

1 lb fresh green beans, cleaned

1 Tbsp olive oil

2 cloves garlic, minced

salt and pepper to taste


  1. Preheat oven to 325 degrees.
  2. Drizzle oil over green beans and season with salt and pepper. Mix well.
  3. Spread green beans onto baking sheet and top with garlic.IMG_0773
  4. Bake in oven 12 minutes. Longer if you prefer your green beans a little softer.

Now it’s time to enjoy the fruits of your labor. SO quick and easy with very little clean up!
